Dried Oyster in Honey Sauce 蜜餞金蠔
Golden oyster are made of oyster that are washed and dried under strong sunlight for about a week.
As the sunbathing time is quite short, the oyster surface is dried whereas its interior is still moist and it becomes crispy outside and tender inside when pan-fried. A fresh oyster aroma lingers on it and is very tasty. The best season for golden oyster is between November and January with meaty oyster and the most suitable climate for drying.
